Mint Choc Chip Cake Recipe – A Fun Family Bake

Mint choc chip is a classic ice cream combination and works just as well in cake form. It always reminds me of being a child as it was my favourite ice cream flavour (funnily enough, it’s also my son’s favourite now!) My mint choc chip cake recipe packs in lots of minty flavour with extra chocolate chips to decorate because, well, you can never have too many chocolate chips! I used dark chocolate chips as these give a real classic flavour to the cake but if you prefer milk chocolate, these can work just as well. All the ingredients can be picked up at local supermarkets such as Asda and…

    Grandma’s Almond Shortbread – A Simple Recipe

This year I’ve decided to get back to exploring some more of my Grandma’s recipe book. Now I’ve already had to hit google numerous times to try and work out what some ingredients are as the recipes are 60 years old, so I thought I’d start with a simple one. The humble shortbread (with an almond twist). Shortbread is an oldie but a goodie and one that takes a little time (to rest) but is super easy for all levels of home bakers (and newbie bakers). I’ve popped an easy print recipe below and if you want to try any of my Grandma’s other bakes after baking the Almond Shortbread,…

    Chocolate Buttercream

Chocolate buttercream is simple to make but just takes a little time. To make sure that the buttercream is light and fluffy, you need to whisk the butter for at least 5 minutes before adding the icing sugar and cocoa powder. This buttercream recipe makes enough for 6 cupcakes or enough to coat 1 x 8 inch cake. To make more, simply double or triple the quantities. You can use the buttercream alongside my simple chocolate cake recipe. If you’d like some further baking inspiration, you can view all of my recipes here.

Chocolate Nutella Cupcakes with Salted Caramel Buttercream

We always have some Nutella or similar chocolate spread in our house but it occurred to me that I’d never actually used it in my baking! Considering how much we like it, that did come as quite a shock. As I love the actual texture of Nutella, I didn’t want to simply stir it into the mixture but rather have it in the cake as a little suprise as you eat it. The result…fantastic! So I couldn’t not share the recipe (it makes 12 by the way). Why not give them a try? Ingredients – Cake 200g butter 200g caster sugar 4 eggs 2 tsp baking powder 40g cocoa powder…

    White Chocolate Cake Pops

Cake pops were (up until recently) something fairly new to me. I’d never made them previously but can honestly say that after making these, I have no idea why I hadn’t!!! They are delicious! I think it’s possibly because the buttercream is mixed in with the cake pieces, it forms a really smooth and creamy cake consistency. I’ve made mine using white chocolate (current fave) but if you’re more partial to milk or dark, simply switch that element. Ingredients – Cake 100g softened butter 100g sugar 2 eggs 1 tsp vanilla extract 1 tsp baking powder 100g self-raising flour Ingredients – Buttercream and Decoration 90g butter 1 tsp vanilla extract…
